For the first time in my life (as far as i can remember), well especially within my ‘new lifestyle’… I have been put on bed rest. Well not full bed rest, i can still work and be normal but i am not allowed to do anything gym related, in particular heavy weights.
THIS IS A BIG DEAL.
I signed the form of ‘you may get infected/you may die’ but when i saw the ‘No gym or lifting’ i actually cried. The Doctor was retiring that day and confirmed i was the first patient to cry at not being able to go the Gym. I don’t know how i feel about that achievement.
2 whole weeks (bargained down from 4 with the Doctor) until i can go back the gym. OK, so its day 2 of 14 and i am like a moody teenager who has a tidal wave of hormones that i am unable to channel – what else is there to do except make some paleo treats!
Drama queen moment over, apologies.
Paleo Raw Carrot Cake!
Carrot cake base
150g Medjool Dates
200g shredded Carrot
70g Whole almond
70g Almond butter
50g Shredded coconut
15g Chai Seeds
1 lemon zest
1tsp of Vanilla paste
2tsp Ground cinnamon
1/2 lemon juice
Put all of the above into a blender, i actually used my nutria-bullet for this as i am a blender down at the moment. Blend all of the above until this comes together, i like mine to be quite a smooth texture so i left mine that little bit longer – 3/5 minutes should do it! Once you have the consistency you want, put this into a lined tray and into the freezer!
Lemon cream icing
1 cup of cashew nuts (soak for 30 mins in boiling water)
1tsp of vanilla paste
3tbsp coconut oil
3 tbsp agave nectar
1/2 a lemon juice
Put all of the above ingredients into a blender, simply blend, blend and blend until your mixture becomes a creamy paste. You want this to have a bit of thickness but if the mix becomes a bit to much then add a bit of water to loosen so that you can add to your cake. I have to confess i added extra Lemon juice but thats just because i am a major fan of anything sour!
Once ready, pour this onto your cake base and pop back into the freezer.
In around 2-3 hours you have permission to put the kettle on and enjoy with a nice hot Green tea!
Add a half a walnut, dash of cinnamon or sprinkle of lemon/lime zest.
