This is a nice quick and simple lunch or dinner, perfect for getting lot’s of protein on board and all of that healthy Omega 3 fats.
Salmon with hot salad
Lemon and Garlic Salmon
2 salmon fillets
2 garlic cloves
Cracked black pepper
In a roasting tray place the salmon fillets, season with salt and pepper, then add in a squeeze of the lemon, roughly chopped garlic and 1 tsp of ghee. Cover the tray with kitchen foil and then place into 200 degree oven for 15 minutes.
While your salmon cooks, you can make your warm salad…
1 pepper (i tend to use 1/2 red and 1/2 yellow for some colour)
Finely chop up all of the above, in a HOT pan put 1 tsp of ghee and then add all ingredients (except spinach) into the pan and fry this up with salt and pepper seasoning. 2 minutes before you serve add in your spinach so this just warms slightly.
Once the salmon is cooked, add warm salad to plate, salmon on top, 1/2 tsp on ghee to melt over and a wedge of lemon to serve.
I love this type of food as there are a whole lot of textures going on, your carrots still have the crunch while the peppers should be nice and soft.
Tip – sometimes i make this for 4, we will eat 2 and then box up the others for our lunch the next day as its even better cold!
