This recipie was originally a Gwyneth Paltrow recipie, I mean if she eats this then maybe I will look like her if I eat it…right?
I made some changes on the original recipie as I wanted to try and knock some of the sugar and carbs out. Keen to get a good nutritious hit when I need it but keep within my Macros.
This is a recipie for everyone, it’s simple and a people pleaser! Especially if you serve with a cup of English tea…
Peppermint energy bars
50g Almond butter
20g pumpkin seeds
80g argarve nectar
30g coconut flour
30g unsweetened shredded coconut
1tsp Vanilla essence
3 tbs cacoa
3 tbs coconut oil melted
1tsp organic peppermint essence
Take all of the above ingredients and pop into a blender and wizz together until this is finely mixed.
Depending on the quality of your blender, you may want to pop your dates into a cup of boiled water for 5 minutes before you mix as it helps loosen the mixture.
Take the mix and place into you acontainer, I use a 7×7 inch sylicone tray and even this out. Then place this into the freezer while you make your chocolate.
Take melted coconut oil, add peppermint essence and Cacoa and mix together well. Then add this to the top of the nut mix and spread out evenly then pop this back into the freezer for an hour.
Tip – you can leave out the mint and this is just as nice, I just really have an obsession with mint chocolate.
I cut this recipie into 16 but you can make them as big or small as you want!
Make sure you have yourself a cup of Green tea when you sit down to enjoy these amazingly heaven bites!
