I ate this that quick I couldn’t even try and get a semi-pro shot!
Shepard’s Pie Mix
500g lean organic mince beef
500g of organic slow cook beef cut into chunks (I prefer shin as this is amazingly cheap from your local butcher and when slow cooked is amazing!)
Note: I LIKE MEAT, you can just go for the mince solo or the chunks solo but i like a good mix to give the meal pace – do meals have pace, is that a thing?!
1 medium onion chopped
2 large carrots diced
3 sticks of celery sliced
1 cup of mushrooms halved
2 tbsp of ghee
Organic beef stock (or cubes)
2 Organic tinned tomatos
1 tbs coconut flour
1 tsp of cinnamon
1 tsp of chilli flakes
2 tsp mixed herbs
2 tsp of salt
2 tsp of black ground pepper
Note: I tend to add in whatever veg that is in my fridge, broccoli, cherry tomatoes, courgette, aubergine, cabbage etc – anything that gets more vitamins into the system!
Pre heat oven to 200 degrees.
Melt ghee in 2 large pans over medium heat. Add onion, mushrooms, carrots, celery and garlic to one pan. Sauté until soft (approx. 10 minutes).
Add all meat to other pan, season with salt and pepper – you don’t need to cook this right through just brown this off and you will cook through in the oven.
Within an oven proof dish (medium rectangular Pyrex dish around 11”x7.5” should do you) put in your meat and vegetables.
Add 2 tins of Tomatoes, 1 pint of beef stock, coconut flour, mixed herbs, cinnamon, chilli flakes and mix in.
Cover with baking foil and cook in oven for approx. 50-60 minutes. When you take this out the mix should have a thicker texture.
Sweet Potato Mash
3 Large sweet potatoes
Salt and pepper
Lets make this simple, prick some fork holes in your spuds and place them in the microwave for around 10 minutes. Once your 10 minutes is up check that they have softened, this can vary by size so just put in for longer if they need it.
BE CAREFUL THEY ARE LIKE BALLS OF ORANGE POTATO LAVA.
Take them out the microwave, slit down the middle and scoop inside of potato into a bowl. Add salt, pepper, ghee and fluff up with a fork.
SIMPLE HEAVEN SENT MASH!
Now you have 2 options;
Option 1 – Cover your shepards pie mixture with your sweet potato heaven and then dish out and enjoy
Option 2 – Split the meat mixture between 6 containers and then add mash too each one. Wait for this too cool and fridge or freeze these until you want to eat them!
