Now I wouldn’t say that I am Nando’s biggest fan, however on a weeknight when you are maybe not quite prepared or don’t want to mess up your clean kitchen, then it is a quick and easy go too restaurant!
Let’s face it, you can’t go wrong with Chicken!
So, I decided that I felt like a little bit of finger chicken licking goodness!
Piri Piri chicken with Tenderstem Broccoli and Sweet potato mash
(Serves 2 hungry people…)
1 small Organic whole chicken
2 table spoons of organic coconut oil (melted)
1 teaspoon cayenne pepper
2 teaspoons paprika
1 teaspoon oregano
3 teaspoons chili powder
2 teaspoons salt
Ground black pepper to taste
Sweet Potato
Ghee
Tenderstem Broccoli
Turn your grill on, ready to get the show on the road!
Take all of the above dry ingredients and mix into the coconut oil to form a season for the chicken.
If you get your chicken from a butchers, ask them to split the chicken in 2 for you, if not then you will have to do this yourself. I tend to cut the spine out of the chicken, be careful as this needs a bit of patience!
Then, take your Piri Piri mix and rub this onto the chicken skin.
Place the chicken under the grill – it normally takes around 20-25 minutes to grill, turning either side every 5 minutes. Each chicken will take different amounts of time so please be sure to check before you eat!
Sweet Potato
Cut sweet potato into once sized cubes ( i remove the skin but feel free to leave this on), pop into a pot and bring to the boil after around 10 minute you should be able to easily stick your fork in. Take them off, drain, throw a table spoon of ghee, salt and pepper and then mash together with a fork. SIMPLE!
Tenderstem Broccoli
In a steamer (or a cullender over the boiling potatoes as i haven’t invested in a steamer yet) place your Broccoli, this normally takes around 10 minute to cook if you like it with a bit of a crunch, if you like it softer then you can boil this in the same way as the potatoes!
ENJOY! It’s not quite nando’s, it’s better even if I do say so myself!
