Nothing says comfort eating like hot out the oven Paleo Banana Bread.
Bread in general is my weakness, but removing wheat and Gluten from your diet kind of kills this off. I have made numerous recipes of Paleo bread but I do always struggle as I somehow always manage to compare it to a warm loaf of Tiger Bread. THEY WILL NEVER COMPARE.
So i find that when i want to have a piece of bread, banana bread is a good way to hit that craving.
Banana and Walnut Bread.
3 or 4 medium bananas
3 large eggs
10 whole walnuts
1 tablespoon vanilla paste/extract
2 tablespoon Argave Nectar
¼ cup coconut oil
1 cups almond flour
1/3 cup coconut flour
½ teaspoon smoked sea salt
1 teaspoon GF Baking Soda
1/2 tsp of cinnamon
It doesn’t get any more simple than this, put all of the above into a blender (I use my nutri-bullet for this) and then whizz this together for 2-3 minutes until this is all blended together well.
Then put this into a loaf tin, i suggest getting them amazing paper liners for your tin so you can just pop the loaf out and not have to oil the tin!
Bake for 50-55 minutes at 180 degrees.
Serve this solo, with honey or Almond butter. Cup of Green tea. Feet up. HEAVEN.
Tip – sometimes I also use this recipe but put this into muffin cases and bake in a muffin tray, it makes around 12 muffins and you only need to bake them for 20 minutes.
Oh, and don’t take 3 pieces to work ‘to share’ as if you are in a greedy mood you will eat all 3 of them **goes and cries at my macro’s app**.
